Paradi Payasa


Hi friends! Ganesh ji is coming this Saturday and you all must be busy decorating the house and in the arrangement of a puja; and I believe you all must have already started making chakli, ladoos, modaks, and many more……… For this auspicious day I thought of sharing one of the traditional kheer made in south Karnataka; i.e.; Paradi Payasa . The recipe may differ from other kitchens but this is how I prepare; so let check out the recipe.  Hope you all like it ….

Method

Soak rice for ½ hour. Later grind it to smooth batter by adding salt and without adding much water.

   Take fresh coconut grated add cardamom. Add little water blend in a mixer and extract thick coconut milk; keep it aside. Again, add water to the blended coconut, run mixer, and extract milk (this is thin coconut milk).

Take this thin milk in a thick bottom pan /vessel and bring it to boil. Once it starts boiling, keep a boondi making plate or any vessel, which has small holes on it (as shown in the above pic) and pouring the rice batter in little by little batches such that rice balls drop into thin coconut milk.

Let these balls (parade) get cooked (be careful that the rice ball doesn’t get stick) to the bottom of the pan. Once the balls are cooked add jaggery (I used jaggery powder in this recipe) mix.

Once it starts boiling; add thick coconut mix and mix well let it boil.Add dried fruit powder (Cashewnuts, almond, and pista) mix well

Now in a small wok or pan heat 1tbsp of ghee add finely chopped Cashewnuts and Almond fry until once it changes colour add raisin and add to the payasa. Serve hot or chilled.

Yeriappa (My Nani’s recipe)

                      This is my Nani’s unique recipe… Yeriappa is a part of festival sweet at my Nani’s house; she use to prepare this on rakhsa bandan day.

  Preparation

 Take 2 well ripped bananas add sugar and blend to a smooth mixture;     take this to bowl add cooking soda, salt and maida (I haven’t mention the   quantity of maida in ingredients list because we add maida to mixture till   we get thick dosa consistency batter). Once you get the dosa consistency   batter,keep aside at least for 4-5 hrs.

     After 4-5 hrs mix the batter well see the consistency of the batter     (shown in the below picture)

     Heat oil in wok (kadai).
    Take the batter in deep round spoon (shown in the below picture)
    and pour carefully in to the hot oil.

  Fry on medium flame until it turns light brown. Yeriappa is ready.

Banana Smoothie

 Hi Friends!

                         Really after a year I grab hold of  time from my routine schedule on a lock down period to post my new nutrition breakfast recipe " Banana Smoothie" .
                             Smoothie is thick  and creamy beverage made from fruit,vegetables,dairy product such as milk and curd.It gives  you energy to keep going all day long; especially for those  who  are busy with their jobs and for those who want to go on diet….. without any much blabla 😊……..I will jump to recipe.

Process of preparation:

In blending jar add banana, curds, honey and almond; blend all the ingredients.

Take a serving bowl or glass add oats, pour blended mixture now garnish with rose syrup,chopped almond and soaked chia seeds.
Serve it. That’s it…. Smoothie is ready

Note:
  1.    n this recipe, I have used only banana, but you can use any fruits of your choice or can make of mixed fruits( except citrus fruits).
  2. you are using pomegranate then do not blend with fruits; instead use   pomegranate seeds.
  3. Can also add few  finely chopped fruits
  4.  You can prepare this previous night and keep in fridge and can have it before leaving to the office.
